Mary Loiusse Isabelle Yap, a 30-year old chef from Cagayan de Oro City, Philippines now based in Toronto, Canada has won the S.Pellegrino Young Chef Academy Competition’s “Fine Dining Lovers Food for Thought Award.” Her Duck Sinigang with Tamarind Consommé was voted as the best dish that represents the culinary heritage of her region, highlighting both traditional culinary practices and the Young Chef’s personal modern vision. Yap works as a chef at the Islington Golf Club in Etobicoke. Congratulations!
